Chef Thierry, Ms Tina and all the staff at La Villa would like to wish a very Merry Christmas and a Happy New Year to all our customers, suppliers, and friends. A special time of the year deserves something special to help everyone celebrate, and La Villa has come up with two exceptional menus to tantalise the palate and thrill our customers. La Villa is very experienced when it comes to wine pairings and both these menus have been especially well put together, with wines that will complement the food superbly.

La Villa Christmas Menu

The Christmas meal will begin with an Amuse Bouche of Sea Scallop served with a Spin ach Emulsion. This has been paired with Bollinger Special Cuvee Brut Champagne to really put our valued guests in a festive mood. A pan-fried Foie Gras and Chicken Bearnaise leads onto a John Dory fish course. After a brief rest, it is time for the meat which comes in the form of beautiful French Cockerel. Following this is the La Villa Christmas Log. At the end, guests can enjoy the Mignardises. The wines that are paired throughout vary from Burgundy, Loire Valley, Chateauneuf-du-Pape, a Bordeaux and a luxurious Port and Champagne.

La Villa New Year’s Eve Menu

A rare treat lies in store for our customers on New Year’s Eve, with the introduction of Spiny Lobster Tail “Tristan Da Cunha”.

The island of Tristan Da Cunha sits deep in the South Atlantic about midway between, and at a similar latitude to, Cape Town in South Africa and Montevideo in Uruguay. It is the main island in the Tristan Da Cunha Archipelago, which is the most remote inhabited archipelago in the World. The main island has a population of less than 270; all residents including children and pensioners are employed in either the fishing or farming industries. It was first spotted by the Portuguese explorer Tristao Da Cunha, and was not settled until 1820.

The area’s species of Spiny Lobster, Jasus paulensis, is commonly known as the St Paul rock lobster. They grow smaller than other species due to the extremely cold water, but are said to be of the highest quality. Such is their importance to the islands that one appears on both the coat of arms and the flag. Only 400 tonnes are taken from the South Atlantic waters annually. This is indeed a unique opportunity for people in Ho Chi Minh City to try such a delicacy.

The New Year’s Eve menu also includes a superb Wagyu Beef Tenderloin served in a rich Wagyu Daube Sauce, made using only the beef shank. With a Scottish Smoked Salmon Scrambled Eggs Amuse Bouche, Foie Gras Terrine starter, Goat’s cheese with White Truffle Oil and a delicious La Parfait a la Figure dessert, chef Thierry has pulled out all the stops to make sure that guests of La Villa can see out the old year in tremendous style. Once again the wine pairings have been chosen wisely and everyone will be more than impressed by the standards of the individual wines and the balance that they bring to the table.
